From our Family to yours.
Hey y’all! We are Jake and Elizabeth of Fojtik Flatwoods Farm. Our farming story starts long before F3, back in college, at Sewanee: The University of the South, where Jake majored in Natural Resources and Elizabeth majored in Biology. We met in an Environmental Education class, and ended up volunteering, then interning together at the University Farm.
When we graduated, Jake came back to his home town of Vero Beach to work for the Florida Department of Agriculture, and Elizabeth joined him in Vero the next year. We started with a small backyard flock of laying hens, adding a few meat chickens to feed our family, and a couple Thanksgiving turkeys each year. Jake’s dad nicknamed our flock LBJ Farms and it stuck (LB is an endearing nickname for Elizabeth, standing for Lizzie Borden). The farm continued to grow with more chickens and turkeys as our family and friends wanted to support our small business, and we were eager to share clean and nutritious food with them. We ran out of room in our backyard, and decided to make the leap and move out to Fellsmere for some more space.
We raised a few Large Black heritage hogs for our wedding dinner, and fell in love with the breed. We found an older farmer selling his Large Black herd here in Florida, and we acquired our first breed stock of hogs. We then started the search for a ruminant that would fit our land, and found Florida Cracker Sheep, another heritage breed, that fit our hot and humid environment perfectly. In 2018, we started selling our pastured poultry, pork and lamb to our local community of Indian River County.
With the arrival of our son in 2020, we decided to rename our farm to reflect our appreciation and love for our family and place. We are 3 generations of Fojtik’s working together to produce the best food for our family, friends and community (we couldn’t do it without Jake’s parents helping with farm projects and baby care!). The ecosystem of pine flatwoods provides many blessing in farming including natural, year round grasses and forages, canopy for shade, and mild winters, while also challenging us to make sustainable management practices to mitigate the effects of poor soil and flood drainage.
