Pork Shoulder Steak

This might be our favorite summertime meat- the shoulder steak/coppa steak/blade steak/pork steak. A cross cut of the shoulder (or Boston Butt), it is well marbled with fat, creating a flavorful bite! 

We like to grill ours like a good beef steak. 

1. Season (salt, pepper, garlic powder) the night before and leave uncovered in the fridge on a wire rack. 

2. Pull from fridge 30 mins to an hour before cooking. 

3. Fire up the grill and sear well on both sides 4-6 minutes per side depending on temperature (pork only needs to be cooked to an internal temperature of 145 degrees according to the USDA!) 

4. Let it rest a few minutes, then slice against the grain and serve!
